Holy Moly Greek Guacamole!

I'm making this today for football food, taken from my father-in-law's amazing kitchen!


GREEK GUACAMOLE

Makes 4 servings

Ingredients:2 ripe fresh California avocados, cut in half, seeded, peeled
1 tablespoon fresh lemon juice
1/4 cup small cherry tomatoes, halved or quartered
1/3 cup finely diced hot house cucumber, seeded (do not peel)
1/4 red onion, finely chopped
1/4 cup pitted, chopped Kalamata olives
1/4 cup crumbled Feta cheese
1 teaspoon chopped, fresh marjoram or oregano or half the amount dried

Directions:Coarsely mash avocados in a large bowl. Stir in lemon juice, tomatoes, cucumber, onion, olives, cheese and herbs. Serve immediately with fried or crisply baked pita chips.
